Jam - in three stages

Stage 1 - put strawberries in a big pot, add sugar and leave overnight.

Rolling Boil

Stage 2 - Once the sugar has disolved, aided by a low heat, bring to a rolling boil for 8 minutes, then test a drip of juice on a cold plate to see if the setting point has been reached.

Jam!

Stage 3 - Fill eight jars with the jam (having let it cool for 15 minutes so that the strawberries don’t all sink to the bottom).

Eat jam.

you didnt sterilise the jars and you havent said how much sugar you use, tsk, tsk, what a recipe ( :
Then, where does the pectin come from. Are you using sugar with pectin added or do you get it seperatly? I usualy can’t find either so I squeeze some lemon juice in instead.

I turn the jars upside down until they cool, there was a good reason but I can’t remember it. Either something to do with the hot air rising and killing all the last bacteria, or to ensure a good seal.

What’s this about the wax disks? Sounds cool, yet another homely invention you just can’t get in my part of the world.

Looks lovely - the trick is not to eat it all before it’s cooled :) . I shove an apple in sometimes to help the set, instead of the lemon. And sib3, I thought it was *always* the same amount of sugar as fruit?

Yes, my apple and blackberry jam set a treat, but the strawberry stuff is a bit runny.

My next one will be elderberry and blackberry - do you think I need apple for that?

can come out really sweet with that much sugar, so i like to play with the quantities a bit. Ive never had a recipe tho so always like to hear other peoples ways. (reduces my own trial and error)
