					<description>can come out really sweet with that much sugar, so i like to play with the quantities a bit. Ive never had a recipe tho so always like to hear other peoples ways. (reduces my own trial and error)</description>

					<description>Looks lovely - the trick is not to eat it all before it's cooled :).  I shove an apple in sometimes to help the set, instead of the lemon.  And sib3, I thought it was *always* the same amount of sugar as fruit?</description>

Then, where does the pectin come from. Are you using sugar with pectin added or do you get it seperatly? I usualy can't find either so I squeeze some lemon juice in instead.

I turn the jars upside down until they cool, there was a good reason but I can't remember it. Either something to do with the hot air rising and killing all the last bacteria, or to ensure a good seal.

What's this about the wax disks? Sounds cool, yet another homely invention you just can't get in my part of the world.</description>
